Ingredients
  1. 1 cup whole wheat flour
  2. 1 cup all purpose flour
  3. 1⁄2 cup sugar
  4. 1 tbsp baking powder
  5. 1⁄2 tsp salt
  6. 2 eggs
  7. 1⁄4 cup butter, melted
  8. 1 cup plain greek yogurt
  9. 2 small ripe bananas, mashed
  10. 1 1⁄2 cup blueberries
  11. 1 tsp apple pie spice
  12. 1 tsp vanilla extract
Instructions
  1. Preheat oven to 375 degrees.
  2. In a large mixing bowl add
  3. dry ingredients and stir until well combined.
  4. In a medium bowl whisk eggs, melted butter, yogurt, mashed bananas and vanilla extract.
  5. Combine wet ingredients with dry ingredients and mix just until combined.
  6. Mix in blueberries.
  7. Scoop into muffin tin lined with cupcake liners.
  8. Bake for 25 to 30 minutes
Notes
  1. You should eat or freeze these within 2 or 3 days. They will freeze for up to 3 months.
  2. Grab a frozen muffin and nuke it for a minute or so and have breakfast on the go.
