Ingredients
  1. 1 tbsp oil
  2. 1 yellow onion, finely diced
  3. 1 clove garlic, minced
  4. 1 cup quinoa
  5. 2 cups Water or broth
  6. 2 cups baby spinach, finely chopped
  7. 4 or 5 leaves of Fresh Basil
  8. 1 cup cherry tomatoes, halved
  9. 4oz Mozzarella Cheese (optional)
  10. salt and pepper
Instructions
  1. In a large saucepan heat oil over medium-high heat.
  2. Add onion and sauté for 3-4 min.
  3. Add garlic and sauté for an additional 30 seconds.
  4. Add quinoa and broth and Bring the mixture to a boil.
  5. Turn heat to low, cover and simmer for 15 min.
  6. Then add tomatoes, spinach, salt and pepper.
  7. Turn off the heat, cover again and allow quinoa to sit for an additional 5 minutes or until the spinach is wilted.
  8. Add chopped Basil and stir quinoa
  9. Serve immediately or store in the refrigerator for 4-5 days
