Ingredients
  1. 2 tbsp olive oil
  2. 5 beets
Instructions
  1. Preheat oven to 400°F.
  2. Remove stems from beets.
  3. Using a pastry brush, cover beets with a layer of olive oil and wrap in foil.
  4. Place beets on a baking sheet and bake for about 1 hour.
  5. Remove foil and use a paper towel to gently rub off the skin.
  6. Chop beets into cubes and dress with Olive oil and Rice wine Vinegar.
  7. Store roasted beets in the refrigerator for 4-5 days.
